Trying to get a starter to rise a loaf of sourdough lunch bread.

We like our sourdough lunch bread style. Proofed this bad boy all afternoon on the countertop covered and then stuck it in the fridge overnight. Then I did the oven lightbulb trick to get the final rise which took about two hours. This is from a new starter, about two weeks old now.
