Not sure if that's especially good for its size or not.

  • 40g unsweetened applesauce
  • 10g rice flour
  • 1g baking powder
  • 0.5g salt

Cook on a nonstick surface over low heat, drizzle on some water, and cover. Repeat after flipping.

Not bad but rather delicate and just hardly cooked through. Gonna try folding in aquafaba to see if I can get more rise.
