Saw this recipe on Instagram from Cuttingwithcarlie (will put recipe in comments) and had to try it! About 20 cals and 2.5g protein each. They are quite thin, don’t really have much of a bite to them and no crunch BUT they are decent if you don’t have much budget left and need something sweet. I flavored my frosting with sugar free jam.

Would be fun to play around with the flavors. I’m thinking an oatmeal cream pie version made by putting two cinnamon flavored ones together with a vanilla filling would be nice and would actually work okay with the texture. Plus there is already oat in them.

    -Nonfat plain Greek yogurt
    3/4 cup ≈ 170 g
    (1 cup nonfat Greek yogurt ≈ 225 g)
    -Oat flour
    3 tbsp ≈ 15 g
    (1 tbsp oat flour ≈ 5 g)
    -Monk fruit sweetener (granulated, erythritol-style)
    3 tbsp ≈ 36 g
    (1 tbsp ≈ 12 g; check label if using a different blend)
    -Vanilla extract
    1 tsp ≈ 4 g
    -Almond extract or cookie butter extract
    1/4 tsp ≈ 1 g
    -Baking powder
    1/2 tsp ≈ 2 g
    -Salt (pinch)
    -Light butter
    1/2 tbsp ≈ 7 g
    (1 tbsp butter ≈ 14 g)

    FROSTING
    -Monk fruit sweetener (granulated)
    1 tbsp ≈ 12 g
    -Greek yogurt
    2 tbsp ≈ 30 g
    (1 tbsp ≈ 15 g)
    -Vanilla extract
    1/4 tsp ≈ 1 g
    -Sugar-free strawberry pudding mix (optional)
    1 tsp ≈ 3 g
    Plus optional sugar free jam

    Spoon onto parchment paper circles of about 20 gram each of the “batter”

    Bake for 15 minutes at 350 F (I baked for 20 for extra brown edges)

    Let cool, then spread frosting on
