Love them! I have tons growing in my woods but they taste rank here. That roadkill funk they have sometimes when you pick them before they’re washed, the ones on my property taste like that, and the greens are bland.
I used to live in a different state and they were delicious there.
Not sure if it’s my area as a whole because I have only eaten them from my property.
I intend to make a spirit infusion of them this season, they are like a spring tonic to we hillbillies.

Ramp pesto, ramps n eggs, morels & ramps & wild turkey. Ramp Jam, pickled Ramps, ramp martinis, ramp potato and leek soup, deviled ramp eggs. ramp and salmon bagels with cream cheese. I can eat ramps until my sweat smells.

RAAAAAAAMPS!!!! I can’t WAIT for spring! I forage for them on my property! I always cook them in bacon grease, topped with crumbled freshly cooked bacon, usually served as a side with pinto beans, cornbread, fried chicken, and fried taters.
The general store/restaurant/gas station (which is the only building in my “town” besides a church) serves ramps with their dinners on Sundays when they have them! I usually take them a few bags worth if I have enough to share.
