There were a couple reviews 8 months ago when this place first opened citing some growing pains and hours long lineups so I added it to my list to try eventually after the hype died down. Went in at 6:30pm on a weekday this week, it was already full and we waited around 20 min for a table for 3.

Looking at the menu you might assume the slightly higher than average prices are because it's a Masaki Saito spot in Yorkville but surprisingly the portions here are huge and absolutely loaded with toppings and flavor. We go out for ramen often and this is the only time I've ever struggled to finish a bowl because of how rich and filling it is. My wife got the smaller sized bowl with a couple side dishes and was stuffed too. You choose your own flavor intensity on the order card and even at 25% for everything as recommended for first timers this was loaded with flavor. Tasted the 50% broths which were great too and curious to try 100% at some point. Excellent noodle texture I'm assuming are made in house with an inch or more thick chashu thats incredibly tender and tasty. I think I still prefer the thinner cut chashu you get everywhere else but preference aside everything in this bowl is very high quality, flavorful and filling

I'm not sure this place will appeal to everyone's tastes and you shouldn't go here expecting a Santouka, Isshin, Ikkousha etc style bowl of ramen but if you're looking to try something different and high quality this is well worth your time and money. I rate this first visit an 8.5/10 and will be back this winter

I went after the opening and the lines stopped. Got 50% as recommended and it was good. Very filling. I ate it for lunch and didn’t need dinner. I went back last month and got it again this time with 100% and it didn’t hit as hard. I feel they may have toned it down. Still very good and recommended.

I will say that Jiro Ramen is not for everyone; it’s not like a shoyu or shio. I’ve had it in Tokyo a few times and it’s super heavy with all the pork fat, and I’m not a fan of the mountain of cabbage and bean sprouts they top it with.

I don’t know why this is in my feed; I’m on the west coast, but fuck me sideways does that look good.

  4. What meat are they using for broth out of curiosity?

I had high hopes for this place but I felt like the pork was too thick for me.
