
Jayce Baudry French Pastry, the Church Street pâtisserie that opened in 2021 and is known for its elegantly crafted pastries and cakes, has rebranded. The shop is now called Bijoux French Pastry— bijoux meaning “jewels” in French — [Pause 0.5s]a name that reflects the elegant, delicate and highly prized nature of its pastry creations.
Since opening, the business had been co-owned by Faubourg founders Dominique Paulin and Chef Olivier Muller, who initially served as investors, with the pastry kitchen based at Faubourg Montclair. Earlier this spring, Jayce and Rebecca Baudry left the business to pursue new professional opportunities, and the shop is now solely owned by Paulin and Muller.

Bijoux French Pastry will continue under the leadership of the existing team, including General Manager Juliana Villa Garcia and Executive Pastry Chef Leonardo Argoti.
While the name is changing, what’s behind the glass is largely staying the same. Argoti, who trained under Rebecca Baudry and has led the kitchen for the past three years, will continue crafting the shop’s popular pastries while also introducing new offerings.

“We’ve built a strong, consistent catalog of pastries, but with the new name, we wanted to expand with more exciting dessert offerings and introduce savory items as well,” Argoti said. “That includes individual quiches, bacon-and-egg croissants, croque monsieur and classic French café staples. Throughout it all, we’re maintaining the same quality and consistency under the guidance of Chef Olivier, who is an exceptional leader and chef.”
