  1. another tip for making broth/stock, debone the chicken and roast the bones in a large dutch oven (toss them in a high smoke point oil), at like 450 for 30-45 mins, tossing them every 15 mins to get even color.

  2. Hey Chris,

    The foam (or scum) that forms on stock is primarily long chained albumin protein, a water-soluble protein from blood residue, muscle tissue, and bone marrow. It rises to the surface first because it’s the most heat-labile—meaning it denatures and coagulates quickly, starting at around 60–70°C (140–158°F).

    Skim early: The foam appears mostly in the first 10–20 minutes of simmering, and once it’s gone, it won’t return. Removing it results in a clearer, cleaner-tasting, and more refined stock.
