I was introduced to this cut a few months ago and it has become one of my favorites. Very similar to flank steak and not cost prohibitive like some of the other cuts. I can find two packs at Costco for 25-30 bucks.

    I like to cut it at about a 30° angle, makes it super tender

    Costco’s two-pack is a solid deal. Same price as buying one NY strip sometimes, twice the meat and arguably better flavor. It’s my go-to when I want steak without breaking the bank.

  9. Whenever I see a recipe for flat iron or flank steak, I substitute thin cut sirloin steak.

    Its like a drink of fresh cow when cooked correctly. Unfortunately, other folks have discovered that and demand has driven the cost up.

    Same as with a flank steak, as long as you don’t overcook it and cut it against the grain it should be good.

    Another great cut, although hard to find is the Petite Tender off the shoulder (rotator cuff muscle). It’s a butchered cut that’s very tender.
