    Skin side down on some cast iron/stainless steel, starting cold, let the fat render and that skin will get super crispy with a perfect glassy texture instead of leathery, which is mid.

    Wait, so you make fish stew/soup using fish with the scales and fins still on? Shit it doesn’t take much effort to descale a whole fish with the back of your knife. I guess if you plan on only making a broth and straining it so you don’t get scales in your throat, but that seems like more effort than just quickly descaling it in the sink before stewing it, but maybe it’s some sort of old family recipe and eat sharp fish scales are good for children and the elderly in your family for some reason? Hell if consuming the scales is some sort of old timey medicine why not descale the fish then buzz the scales up into a powder and put them in 00 gel caps to prevent damage to the esophagus?

    Is this redfish? If it is is best in the oven in a layer of onion rings and potatoes cut in rounds. A bit of sweet paprika on top and olive oil

Where are the seasonings, the butter, something like lemon? Idk, maybe if you actually did a little research or followed a recipe, it might have actually been good…

    Red snapper?? Looks like one I did similar with at the fishmongers went in for salmon came out with an entire red snapper.
    Never cooked a fish whole with eyes and everything but ate it all. Deboning was tricky but it was great!
