






I have been to Chez Bruce a few times but this may have been the best yet.
I had to post this because I went on this occasion specifically for the Pig's trotter a la Pierre Koffman. I was too young to have the original and MPW's rendition but this definitely tasted delicious. Incredibly rich and decadent but so good. Stuffed with chicken mousseline, calves sweetbreads and chanterelle. One of the best dishes I have ever had. And only on for a few weeks a year.
Other dishes:
Lobster Raviolo with bisque. Delicious.
Prune, almond and armangac tart. Lovely if a tad sweet

Oh boy, a Koffmann classic. Love it! I first had it at his pop up at the rooftop at Selfridges and then multiple times at Koffmann’s at the Berkeley.
The trotter sounds amazing – it’s an iconic dish. Are those potato chips on the puree? That is an odd choice to me and a step down from the cracklings that Koffman used (though I don’t think the presentation holds up today either way).
Not been to Chez Bruce for about ten years, it might be time for a return! How long is it on for, and how much are they charging? I think Otto’s may be the only other place serving it at the moment.

This looks sloppy but in a way i want to really try it. Gonna look into this for a visit in spring
Is it… good? I watched the fallow and adam byatt videos on the trotter and the mousse just looks kinda bland. Where does the flavor actually come from? I really would love to try it but flying out to london for a pig foot is a little extra, even for me…
