Here is the list of ingridients from the video:
Chicken Fajitas –
1kg (2.2lb) – Chicken Breast, Butterflied & Sliced Into Strips
2 Tbsp (40ml) – Avocado or Olive Oil
1 – Large Brown (Yellow) Onion, Thinly Sliced
2 – Bell Peppers (Capsicum), Thinly Sliced
5g (0.2oz) – Fresh Oregano, Roughly Chopped (Substitute 1 ½ tsp (2g) Dried Oregano)
Salt To Taste

Black Bean Coriander Rice –
1 Cup (200g) – Long Grain Rice, Washed
1 ¾ Cups (430ml) – Cold Water
1 Can (280g) – Black Beans, Drained and Rinsed
10g (0.3oz) – Coriander (Cilantro), Chopped
Salt To Taste

Guacamole or Salsa –
1 – Avocado, Coarsely Smashed
¼ – Red Onion, Diced
1 – Tomato, Diced
5g (0.2oz) – Coriander (Cilantro), Roughly Chopped
1 – Lime, Juiced (Zest Optional)
2 ½ tsp (12.5ml) – Avocado Oil
Salt To Taste

Tortilla & Filling –
7 – Tortillas of Choice, Slightly Warmed
Salsa or Sauce of Choice
Guacamole

My main concern is that the recipe contains a raw tomato, and as I was told, if you use a raw and juicy vegetable in a burrito, it will come out soggy after being frozen and defrosted.

Also, in the end he suggests adding guacamole/avocado or sour cream, and as I understand, those are not good at being frozen too.

But then also, I heard the opinion that the rice is gonna help by absorbing juices from other ingridients.

    yeah you’re spot on about the tomato and guac – they’re gonna turn into a soggy mess after freezing 💀 i’d skip those fresh ingredients and maybe add them after reheating instead. the chicken fajita and rice combo looks solid though, just wrap those core ingredients and keep the wet stuff separate for when you’re ready to eat 🔥

    Everything in this list under guacamole or salsa – you do not put on the burrito until you’ve heated it and you’re ready to eat it as they are condiments.

    I’m not a very big fan of salsa but I do like pico de gallo and I do like guacamole. I just add that to things when I’m going to eat them.

    I generally make a crema or a slurry salsa if I am putting a condiment inna breakfast burrito. The texture doesn’t really change for those things.

    If i ever do add waterly veg to burritos i cook the water out of them first. So sometimes ill do tomato spinach and onion, and I cook the veg before I add it to the rest of the ingredients, it doesnt turn watery. Nothing raw/fresh should be frozen and reheated.
