Used PF changs kung pao sauce. Marinated the chicken in it for a few hours, fried them up, separately cooked some onion, red pepper and mushrooms. Chopped up the chicken added it to the veg and simmered with the remaining sauce. For the two smaller containers I used a super grain rice, the long container I used cilantro / lime basmati. Topped with a few slices of jalapeño.

(Not imaged) for my cold snack I sliced some mini cucumber, put them in a sandwich bag with a piece of paper towel, a very light squeeze of lemon and a sprinkle of everything bagel seasoning. I’ll be dipping them in red pepper hummus that I’ll pack in a smaller cup.
