Day 11: Maple & Balsamic Roasted Carrots 🥕
These delicious carrots are tossed in olive oil and spices, caramelised, and spooned over a creamy tahini yoghurt with lemon and dill.
I’ve been making this recipe for years and it never disappoints!
I’m posting one veg recipe, every day…
should I keep this series going?
Head to my website for the recipe and tell me which veg you want next 🤍

Can you suggest something for someone like me?
Due to health complications I no longer have a large intestines. I dont know the exact reasons but I go through terrible pain when I have a small bowl of salad. My oncology team told me it had something to do with insoluble/soluble fibers, and my small intestine changing after the large was removed. I have an ostamy so I'd prefer not seeing things that dont digest or look like insects when they come back out… like bean sprouts… that freaked me out.
My diet for the last few years is mostly meat, love me some meat, anything I can cook in with meat is good too.
Onion
Cooked in oil bell peppers as if it isnt softened up it hurts
Potato. Fried, loaded, shaped. My body doesnt have issues with this one.
And noodles.
I can eat almost anything but most anything with fiber hurts if its too much. To give an idea. A small cereal bowl of salad with Romain being half the contents will cause pain. 1 bite of celery will do it too. Even cooked and oiled they both cause issues.
I can do rice pretty ok though.
I miss me some salads. Used to get hyvee salad bar a few times a month… gods that was good.
Thanks for sharing this recipe. Will definitely try this, ❤
