
Comfort food for me anyway 😊. It has that savory satisfying, holiday dinner feel.
Baked sweet potato with 1/3T butter 200 cal; seared tofu 90; cauliflower “steak” 20; mushroom gravy 100.
Tofu and cauliflower were both marinated for a little while in soy sauce, finished the cauliflower in the air fryer. Tofu was seared in a nonstick pan. Gravy is sautéed mushrooms, nutritional yeast,
1/2t butter and vegetable broth with 1t of flour. Everything seasoned to taste with salt, pepper, and fresh cilantro at the end.
