    Use the duck fat to fry potatoes, cook the breast in a cast iron skillet skin side down, roast the rest of it imo. Or roast whole. Depends on how and if youre breaking it down

    Dude Tell us the recipe, how did you achieve that crispy crust? I’ve seen the Chinese make duck like that, I want that too!

    alright if its a full duck i dry it over night then salt it, roast on a wire rack at 400 for like 20 min turn down to 300 and roast for like 2-3 hours until breasts are about 135. about 30 mins into roasting i pull it out pour all the duck fat over another baking sheet thats prepped with a medley of parsnips, carrots, new potatoes, turnips, shallots, garlic a bunch of tyme and then throw it all in the oven.

    if im feeling saucy i make a wine reduction while its resting.
