Was my first time doing the cheesy crust people do sometimes, and it turned out really well. Sourdough bread with white American, cream cheese, and shredded queso chihuahua inside. Grilled it like that first with butter and mayo. Was out of cheddar unfortunately but it was still good without.

Then did the cheesy crust on both sides with the queso chihuahua, and it was perfectly crispy and delicious. It’s very similar to like a Monterrey Jack cheese or a mozzarella imo. You want something like one of those three that can start melting and getting crispy as soon as you get it in the pan and lay your grilled sandwich on it, so that it doesn’t take too long.

Was good, would do again.
