One&Only The Palm in Dubai is set to introduce a new luxury dining destination, L’Abysse by Chef Yannick Alléno. The opening represents the brand’s fourth global location, joining its outposts in Monte Carlo, Osaka, and the original two-Michelin-starred venue in Paris.

 

Set to open in April 2026, L’Abysse will be located in an overwater venue, designed by architect duo Frédéric Rochette and Hervé Winkler, featuring sea-inspired spaces and bespoke art installations. 

 

The restaurant will offer an intimate setting, accommodating just 34 guests, with 10 seats at the counter, 16 in the main venue and eight in a private room. Diners can expect a curated omakase menu blending traditional Japanese techniques with French influences. 

L’Abysse will be the fourth addition to Alléno’s growing portfolio at One&Only The Palm. Stay, the resort’s two-Michelin-starred restaurant, serves authentic French cuisine with two fixed menus. For guests seeking Italian flavours, Zest offers dishes such as Tuscan-style Tomahawk steaks and handmade pastas. Meanwhile, 101 offers waterfront Mediterranean dining, with fresh seafood, alongside an exclusive waterway access for boat owners. 

 

Hailing from Paris, France, Alléno has earned 17 Michelin stars during his career. He first joined One&Only The Palm in 2010 and oversees all dining experiences at the resort.

Reflecting on his culinary approach, Alléno said: “I always seek out new ideas to be in line with guests’ expectations. In my opinion, to feed someone is a responsibility.”

The launch of L’Abysse comes amid a surge in Dubai’s fine-dining scene. Recent high-profile openings include Nobu at One&Only One Za’abeel in January 2026 – its third UAE venue – and Carbone at Atlantis The Royal, which opened in October 2025.
