MOROCCAN CHICKPEA SOUP 🍲

Moroccan Chickpea Soup 🍲 (Serves 4–6)
Ingredients:
• 2 tbsp olive oil
• 1 medium onion, diced
• 2 celery stalks, chopped
• 2 carrots, chopped
• 3 cloves garlic
• 1 tbsp tomato paste
• ½ cup pasta sauce
• 1–2 tsp sriracha (to taste)
• 1 tsp cumin
• 1 tsp paprika
• ½ tsp turmeric
• ¼ tsp cinnamon
• ½ tsp black pepper
• ½ tsp salt (plus more to taste)
• ¾ cup dried lentils, rinsed
• 4 cups vegetable broth
• 2 cups fresh spinach
• 1½ cups cooked chickpeas (or 1 can, drained & rinsed)
• Juice of ½–1 lemon

Instructions:
-Sauté onion, celery, and carrots in olive oil until soft.
-Add tomato paste, pasta sauce, sriracha, and spices; stir until fragrant.
-Mix in lentils, then pour in vegetable broth.
-Simmer 20–25 minutes until lentils are tender.
-Stir in spinach, chickpeas, lemon juice, and adjust salt. Serve warm.
