I left it at 68F three days, 6 days in fridge and it’s delish. This was a half batch, it makes a lot. There was a fourth jar but it got used in various concoctions. It was easy to make also

    Honest question, what’s not vegan in the regular one? I’ve never tried it but thought it was just the leaves and some spices or flavour things idk

    We are very lucky that choi’s kimchi is vegan and they sell in a large jar at the restaurant supply store
