Lemon and Herb Farro Salad
Prep time: 20 minutes
Total: 1 hour
Ingredients:

1 cup pearled farro
1 cup apple cider or apple juice
2 tsp salt
1 cup Italian dressing (homemade is best!)
1 cup roasted pistachio
1 cup Freshly chopped parsley
1 cup freshly chopped mint
1 cup cherry tomatoes (sliced lengthwise)
1/3 cup thinly sliced radish (2 or 3)
6 oz arugula
1/2 cup shaved Parmesan
1 tsp crushed black pepper
Salt to taste
1 lemon

Instructions:

1.) In a medium saucepan, bring 3 cups of water, 1 cup apple cider, 1 cup of farro and 2 tsp. of salt to a boil. Let simmer for 30-40 minutes until tender.

2.) In a small bowl put warm farro and Italian dressing, mix and let marinate for 15 minutes.
3.) Add arugula to a large serving platter. When ready to serve mix in farro along with pistachio, parsley and mint, cherry tomatoes, radish.

4.) Sprinkle on parmesan, black pepper and salt. Cut and squeeze the fresh lemon on salad and mix gently.

Note: Salad can be made ahead. Reserve farro and lemon juice until just before serving.
