Hey folks 🙂
So tonight for tea, I made this incredibly easy slow cooker beef & Guinness stew! Amazing flavours in this…and unlit comforting and rich, but not too rich 🙂 This isn’t a very thick stew, so best served in a bowl with some bread and butter on the side 🙂 We had sourdough bread, but I think it would have been lovely with soda bread too.

These ingredients will fill a 3.5 litre slow cooker and will give you enough for 5-6 modest bowls of stew…or 4-5 generous bowls 🙂

Serves 5-6

250g (1 cup) Plain (all purpose flour)
1 Large onion, cut into chunks
3-4 Large potatoes, cut into large chunks
240ml (1 cup) Guinness
1.5 Lbs Stewing or braising steak
2 Pints (4 cups) Chicken stock
2 Large carrots, cut into large chunks
1 Tablespoon tomato puree or paste
1 teaspoon salt & pepper/Paprika
3-4 Bay leaves
1 teaspoon chopped garlic
Olive oil for frying

  2. I love stew but I’m sorry
    . the Guinness beer 🍺 makes it very sour 😮. Usually i avoid putting it in. Or maybe Canada 🇨🇦 is just naturally sour the beer 🍺 we have. The Guinness might not be good quality 😮 🤷‍♀️😌

  5. I personally Wouldn’t use chicken stock tho 🙄I would use beef stock or vegetable stock. put Worcestershire sauce in it as well . I will definitely add dumplings.

  6. If you want to thicken the sauce, if it’s too runny, I’ve mash some of them potatoes down in the sauce. Or get a can of chickpeas drain them ..blend the chickpeas up and pour in half a can.. thickens better than flour.😊
