What are some of your go to beef cooks that are some shorter than you're typical low and slow cooks? Let's say sub 4-5 hours?

    I like to make tri-tip roasts. Low and slow for about an hour, 225 degrees and then sear for a few minutes. Delicious!

    Whatcha doing here? I’d love to be able to make some vortex steaks but not sure how to approach
