كبة مشوية على الفحم – وصفة لبنانية تقليدية من مطبخ العائلة، متوارثة عبر الأجيال.
في هذا الفيديو نُحضّر الكبة بطريقتين:
– حشوة الزورات الغنية بالدسم والنكهة
– وحشوة اللحم المفروم مع الصنوبر واللوز والأعشاب

تُشوى الكبة على الفحم لتأخذ نكهة مدخنة مميزة لا تُقاوم، مثالية للمناسبات العائلية ومحبي المطبخ اللبناني الأصيل.

🥣 Kibbeh Shell Ingredients

● 1.5 kg kibbeh meat (lean beef, finely ground)
● 2 kg fine bulgur wheat (soaked at least 30 minutes)
  • 1.5 kg brown bulgur
  • 500 g white bulgur
● 3 onions
● 1 red capsicum (bell pepper)
● 2½ teaspoons ground cumin
● 1 teaspoon black pepper
● 3 heaped tablespoons red chilli paste
● Handful of fresh basil
● 2 tablespoons dried basil
● Salt to taste

🔥 Hashweh (Fat Stuffing)

● 4 kg medium minced lamb fat (zourat – minced fat)
● 4 onions
● Small handful fresh basil
● 1 tablespoon dried basil
● 10 fresh red chillies, blended (optional)
● 1 heaped tablespoon chilli paste
● 1 teaspoon ground cumin
● Salt and black pepper to taste

🥩 Lahmeh Filling

● 500 g minced lamb
● 2 onions, finely chopped
● Pine nuts and slivered almonds (to taste)
● Salt and black pepper
● A little chopped parsley
● A little chopped mint
