

I could live off pit beef. Thanks to my job I get to go all over my state of Maryland. Here's a great example from "Fast Eddie's" in Fallston, MD…the "standard" I've seen most places is a kaiser roll so this spot got some points from me for using a brioche bun.
Medium, extra pepper, tiger sauce (mayo/raw horseradish), thin sliced onion and some tangy mustard.
Nothing beats just the beef and raw horseradish though.

Nice! Which spot is your favorite? I’ve only had Chaps, I’ve heard good things about Pioneer. I’ve been meaning to check them out.

I’ve only been to Maryland a couple of times but Chaps Pit beef was the BEST sandwich I’ve had in my entire life!! That’s from a New Yorker transplanted to Georgia. I will die on that hill until someone comes along with better!

Interesting. I grew up in MD. Never really knew this was a regional thing. But now that you mention it, I’ve never seen it anywhere else
Maybe I’ve not been to the right place, but in my 15 years here I’ve never had a good pit beef sandwich. Some of the driest and most bland beef I’ve ever had.
