












Insufficient notes and too much wine for a full review but I was blown away by this incarnation of Marc Veyrat’s legendary place. More memorable food than several 3⭐️ places I have been, and exemplary service and pacing. There were a few theatrics but these were confined to the first half of the menu, which I always think is a good choice. Exceptional balance of flavours throughout, and 2-3 highly notable dishes including a celery and truffle creation, a remarkable piece of lamb with a side of potato with a cheese sauce which almost stole the whole show, and an cheese dish based on a rare and surprisingly mild blue cheese which came as an alternative to the also-available cheeseboard. Top stuff all round, recommended. Menu was €320, with an alternative fish-based one at €420.
