Put some blue cheese on top that didn’t really melt that well. Guess I need to mix the blue cheese with something to make it more creamy? Anybody got any tips or recs?

    Take some butter (even better if you add other stuff and/or use a premade compound butter) and mix it with the blue cheese crumbles at about a 50/50 ratio, both room temp. Throw it on the steak while its still hot/while its resting and itll cover/melt much better

    Also not all blue cheeses are alike, get some high quality gorgonzola or, even better, roquefort. If the cheese is low quality might as well just enjoy the steak on its own and use the cheese for crackers or a salad or something imo
