I did 4 stretch and folds over two hours of time , every 30 min. Left it until it looked jiggly and had slight bubbles . About 4-5 hours. Then put in fridge overnight . Baked it at 450 with lid for 30 and without for 15.

My recipe is close to yours minus the milk. But I can’t get a rise like that to save my life!
Your rise is wonderful! Mine usually measure about 5” or 6” high. I have yet to see anything higher than 6”

Your Dutch oven is encouraging the shape of the loaf and pushing it upwards, kind of like a loaf pan.
Just curious, do you let it proof in the cast iron?
