🍫 ULTIMATE CHOCOLATE CAKE RECIPE (16cm Round)

Cake
* 70g butter
* 100g dark chocolate (≈50-60%)
* 2 eggs (separated)
* 80g sugar (30g + 50g)
* 25g plain flour
* Pinch of salt
* Optional: splash of liquor or vanilla extract
Method
1. Melt butter and chocolate together, leave to cool slightly.
2. Whisk egg yolks with 50g sugar + salt until pale and ribbon stage.
3. Sift in flour and mix.
4. Add melted chocolate mixture and combine.
5. Whisk egg whites with remaining 30g sugar to stiff peaks.
6. Fold whites into batter in 3 additions (do not overmix).
7. Bake at 180°C / 350°F for about 30 min or until toothpick inserted comes out clean

Ganache
* 200g chocolate
* 200g cream
* Pinch of salt
* 1 tbsp butter
Method
1. Chop chocolate.
2. Heat cream to a simmer (do not boil).
3. Pour over chocolate and rest 5 min.
4. Add butter, then whisk smooth, cover, and cool.
5. Whisk once completely cooled till light and fluffy but do not over whisk or it will separate.

Assembly & Chocolate Decoration (Feuille d’Automne Style)
1. Fill cake with ganache and ice. Leave to set but do not let it get cold.
2. Melt 250g chocolate.
3. Spread thin on warm baking tray (50°C).
4. Chill 10 min, then let return to room temp.
5. Scrape to form curls and rolls.
6. Arrange around cake and form fan for top.

  4. Hey, just a heads up. Your title in your thumbnail looks like "I rench chocolate cake" instead of "French chocolate cake" because the line on the F in "French" is too light. The font on that part of the F is too thin and almost invisible.
