My first tray from this batch came out terrible like every single one was cracked but my second tray came out pretty good I think I don’t understand how that happened. Also any advice on how to pipe hearts would be greatly appreciated.

You probably didn’t rest them long enough. The first batch didn’t have a strong enough skin so they made a volcano where the air burst out the top rather than from the bottom. The second batch rested longer and had a stronger skin. Your oven could also have had a heat spike during the first batch and was more stable by the time the second batch baked.

First tray didn’t rest and develop a skin long enough. This has happened to me a lot because I get impatient and want to bake too soon. Really let them rest and dry out so they’re dry to the touch and not tacky at all.
