



I did my prep for the week. I don't prep whole meals, I prep all the ingredients, and things that take a little longer, so I still have some flexibility during the week. So I cut all my vegetables, and made pulled pork, pickled cucumbers and coleslaw. The coleslaw I will use for several lunches (with different proteins), the pulled pork for several dinners. I also cut up some melons. I might use them with some greek yogurt for breakfast (if I decide to have breakfast, which is rare), or I'll just eat them as a snack.

Nice! I do the same (along with a couple of big batch things like soup or chili or lasagna) because I want dinners during the week that don’t take a long time to prepare. That has opened up my afternoons so I can work out, walk the dogs, relax rather than sweating meal prep. Also I am full time WFH so with your method above, I can put together varied lunches during the week to alternate with leftovers.
