Meal prepping this salad for lunches, but I’m worried it might be a bit bland. Is there anything you would add?

    I have never had tinned lentils so don’t know if they are seasoned, but I would be adding a lot of salt and probably lemon. If there wasn’t enough punch to the vinegar I’d also add more of that.

    Looks like a dense bean salad so anything else that u would put in a dense bean salad would work

    I feel like a seasoned nut or seed like a salted pumpkin seed or walnut.

    I’d add salt, pepper, fresh chopped dill, and walnuts (or pine nuts).

    A sprinkle of salt flakes will redeem almost any bland meal. I like the seeds idea, too. Kind of like non-carb croutons.

    Canned lentils are terrible. I would just make some, also I don’t see a grain of salt in this recipe. Either the salad or the dressing. I would certainly add some. And pepper.

  7. I wouldn’t change much, maybe feta for ricotta. It’s got earthy, hearty, bitter, sweet, crunch….

  8. A little shallot or garlic in the dressing perhaps?

    I’d probably amp up the mustard in the dressing, plus add garlic and lemon as others suggested.

    Radicchio leaves are super duper bitter so I wouldn’t say it’ll be bland but I wouldn’t like it

    Maybe some feta instead of ricotta. Lemon and dill. Maybe some nuts of some sorry?

    – more dijon in the dressing
    – salted toasted nuts and or some olives
    – lots of black pepper

    I would punch it up wit herbs: lemon thyme, dill, mint, whatever you like. Switching it up can help it not feel like a drag as the week goes on.

    The mustard in the dressing will add the perfect punch to this. I would add craisins, sunflower seeds, or a vegan feta cheese.

    I’d add a little fresh or powdered garlic to the dressing and increase the vinegar (or add lemon or lime juice). I’d also consider adding thin sliced onions or scallions to the salad.

    The dijon mustard looks like it should flavour it nicely.

    The dressing looks pretty good as is. Maybe toss the salad in lemon juice outside of the dressing.

    I think it needs some acidic elements in the salad, so pickled olives or onions?
