Hey everyone, here's the next recipe which turned out pretty good considering the modifications. Ended up dry brining overnight which has a great idea. And because I wanted to air fry, I skipped the additional battering stage at the loss of more texture. The sauces though were very good. Overall, I would make these again and maybe even try the full deep fry method

    I did a riff on these for the _last_ Super Bowl. Great results, very crispy.

    I’d highly recommend at least a shallow fry.

    The whole entry is worth a read or two. The theory behind getting things crispy has helped me in other areas as well.
