Like I said before, I am not gonna stop the 12 days of cookies until I have completely finished. And this is day 10, next up is my monster cookies at my daughter Hailey absolutely loves and then upon request for my son Brendon, my famous chocolate chip cookies.

These oatmeal cookies are absolutely amazing, it took me a little bit, but I think I have perfected them. The raisins are nice and soft. The cookies are chewy and they just taste so good by adding some molasses. It really did kick these cookies up a notch.

Ingredients:

1 cup of melted butter
1 cup of raisins
2 cups of quick cooking oats or old-fashioned oats 

1/2 cup of white sugar
1 1/2 cups of packed brown sugar
1 tablespoon of molasses
1 tablespoon of vanilla
Two large eggs, plus one egg yolk

2 cups of all purpose or bread, flour
1 teaspoon of salt
1 tablespoon of pumpkin pie spice
1 teaspoon of baking soda
One cup of quick cooking or old-fashioned oats

Directions:

1. Start by melting your butter and adding the raisins and the oats, I actually use both quick cooking and old-fashioned oats together. Stir the raisins and oats into the butter. Make sure that they’re well coated and set aside.
2. Combine sugars, molasses, vanilla and eggs into another bowl. Mix well until the color starts to become a lighter brown and is light and fluffy.
3. Into a third bowl, combine the flour, salt, pumpkin pie spice, baking soda, and the additional one cup of oats. Whisk together till everything is mixed through. 
4. Preheat oven to 350°.
5. Add the raisin mixture and the dry mixture to the cream mixture. I suggest using a wooden spoon and mixing it all thoroughly through. Then grab a tablespoon serving spoon and drop onto a cookie sheet. Now I like to make mine a little big but you could do them smaller. You should get about three dozen cookies per batch.
6. Bake for about 10 to 12 minutes making sure to watch it carefully when the edges start to turn brown. They are done. Pull them out and let them set for about five minutes on the pan because if you take them off the pan too soon they will be a little crumbly. So they have to completely set up before you move them onto the counter to let them completely cool.

You’re gonna absolutely love this recipe for these oatmeal cookies. I made them and my kids had them gone by the next day because they really are amazing.

  3. I made chocolate chip cookies for my son birthday. I used unbleached all purpose flour and a little extra vanilla they were the best I ever made.
    I will have to try your oatmeal cookies- the raisins.

  8. It's funny , growing up I never thought I would be the motherly type .. Then went on and had 5 children of my own and helped raise my 3 nieces and nephews and half the neighborhood children lolol Did you ever see yourself raising all the successful children ?? All of my children grew up to be successful adults .. I never thought I had all of that in me .. Now my grandchildren come over and dont wanna leave lolol. It just warms my heart so much ! Kinda a candid question .. But as myself I never seen me being a mother .. Then I became mother of the year lolol..
