Watermelon Feta Salad🍉

Ingredients (Serves 3–4)
• 4 cups watermelon, cut into equal-sized cubes
• ½ cup feta cheese, crumbled
• 2 tablespoons fresh mint leaves, finely chopped

For the dressing
• 1½ tablespoons lemon juice
• 1½ tablespoons extra virgin olive oil
• 1 teaspoon honey (adjust to taste)
• Salt, to taste
• ¼ teaspoon chilli flakes (or to taste)

Method
1. Place the watermelon cubes in a large serving bowl.
2. Sprinkle the chopped mint over the watermelon.
3. In a small bowl, whisk together lemon juice, olive oil, honey, salt, and chilli flakes until well combined.
4. Pour the dressing over the watermelon and gently toss to coat evenly.
5. Crumble the feta cheese on top. Toss very lightly or leave it layered on top.
6. Chill for 10–15 minutes if desired and serve fresh.

Notes
• Best served immediately for maximum freshness.
• You can add cucumber or olives for extra texture if you like.
• Keep salt minimal since feta is naturally salty.
