  1. Do the searing and rice frying in the pan, and right after that, pour hot water or stock and transfer it in the oven for 50 minutes at 190C. The flavor will be out of this world.

    Don't you have an extractor hood?
    For medium heat you don't need a special oil…… butter, lard, tallow, olive oil and avocado oil are pretty fine with this temperature.
