Today’s sandwich of “our history” requires a bit of work but man is it ever worth it. As you might guess from the name Nonna Anna’s Leftover Meatball Sandwich, we’re gonna have to make meatballs and sauce. And yeah, come cheese is gonna be involved. Oh this is gonna be good. Oh and you might notice that I screwed one thing up. I should’ve stored the meatballs in the sauce overnight. Oh well, still super tasty.

    Love meatball sandwiches so much. Right up there with day later meat loaf and day after Thanksgiving turkey sandwiches.

  2. I never squeeze the milk out, I just put it all in. Wonder how different it actually makes it ornot. Certainly a little moremoisture and fat, and sweetness from the lactose and whey, but I'm genuinely curious to do a sideby side. 🎉. P.S. Many, ifnotmost, ofyourvideos make me hungry, but a Grandma's meatball sandwich!?!?!? C'Mon!? 🎉

  4. I've been on Earth for 53 years and my RI Italian American Mom has made her meatballs with just ground beef since I've been alive. I promise it works.

    I'm pretty sure her sister and their Mom (my Nana) did too.

  5. Growing up in an Italian family, can confirm we did this on the regular. The one thing we did differently was to add mayo to the bread before the meatballs. Otherwise, it was the next day's meal 100%

  10. I was really eager to try this out as a pasta dish, but i couldn't find a recipe so i kind of distilled it from this video. For those who want to make it as well, this is how i made it:

    Tomato sauce with meatballs a la Nonna Anna

    Ingredients for 4 people
    • 50g tomato paste
    • 800gr (two cans) of crushed tomatoes
    • 250ml red wine
    • 2 hot cherry peppers or red jalapeño
    • 500g ground beef (~20% fat)
    • 2-3 slices of stale bread
    • 100ml milk
    • 1 egg
    • 40g parmesan cheese
    • 100gr of pasta of choice per person
    • Bunch of parsley
    • Bunch of basil
    • 6 cloves of garlic
    • 1tsp baking soda

    Instructions
    1. In a bowl, soak the stale bread in the milk.
    2. Mince 4 cloves of garlic and the peppers. Sauté them with a couple of tablespoons of olive oil together with the tomato paste.
    3. Add crushed tomatoes together with the basil, red wine and a pinch of baking soda.
    4. Optionally add some oregano or other Italian dried herbs, salt and pepper to taste and cook the sauce for 20-30 minutes.
    5. Now make the meatballs. In a bowl combine the ground meat with the egg, chopped up parsley, parmesan cheese and salt and pepper to taste.
    6. Squeeze out the excess milk from the bread and it to the meatball mixture.
    7. Make 15-20 meatballs from the mixture.
    8. Cook the pasta in boiling water with copious amounts of salt.
    9. Fry the meatballs in a couple of tablespoons of olive oil. When they are cooked well add them to the tomato sauce to simmer.
    10. Drain the pasta and serve with the tomato/meatball sauce.
