


made these on a whim when I got eggs on sale, they’re chocolate macarons with a dairy free chocolate orange ganache! soooo excited to try more flavors and fillings!
this dairy free filling was made with coconut cream, and my partner (who is allergic to dairy and the reason I’m making them dairy free) did not like it 🙁 any other suggestions for dairy free substitutes to use in creamy fillings? I’ve used Califia farms DF heavy whipping cream in other recipes but not in something like this

Achieving footwork on your first go is admirable!
For non-dairy “creamy” fillings… I think an Italian meringue “butter”cream made with margarine or other such fats may work. I mean they don’t taste amazing on their own, but good dark chocolate and vanilla can do a lot.
The water content in alternative fats is usually different than butter, although margarine I believe is designed as a butter sub so has similar ratio water to fat.
To boost flavor in macarons you can also do two flavors in one sandwich pretty easily. Pipe a ring of say chocolate buttercream, then fill the center with jam!
