Conor Gadd, the chef co-owner of Trullo in London’s Highbury, is to open his first solo restaurant in London’s Covent Garden next month.

 

Opening on 11 March, Burro, meaning butter in Italian, will serve hearty Italian cooking with a nod to Gadd’s Irish heritage.

 

Antipasti includes salumi and house made focaccia and cuttlefish stuffed with breadcrumbs and anchovies, while the pasta selection ranges from Aylesbury duck ragù and porcini tagliatelle to tortellini in brodo and fettucine alfredo. Other dishes include Dover sole with prosecco and caviar and tiramisu doughnuts.

 

The menu is paired to an Italian wine list focusing on Piedmont and Tuscany, curated by head wine buyer and sommelier William Amherst. Negronis, martinis, sbagliatos, spritzes, vermouths and Italian amari will also be available.

 

Burro has been designed by Lisa Helmanis of Day Studio and features faded red and dusty yellow walls, curved woodwork, velvet banquettes and a Celtic touch.

 

Gadd said: “Never in my wildest dreams did I imagine opening a restaurant in Covent Garden. But as soon as I saw the room – and the courtyard – I knew it was an opportunity I couldn’t miss. It’s been a labour of love with a brilliant team, and we can’t wait to welcome guests with some amazing food served in the warmest, most elegant of rooms.”

 

Gadd began his career in hospitality aged 16, training under chef Paul Rankin at Belfast’s formerly Michelin-starred Roscoff restaurant and later at the Ballymaloe Cookery School in Ireland.

 

When he moved to London, he joined Trullo, where he was promoted to head chef in just 18 months. He continues to oversee all aspects of Trullo as chef co-owner.

 

Trullo was launched in 2010 by founders Tim Siadatan and Jordan Frieda.
