Pasta alla Vodka

Ingredients
250 g penne pasta2 tbsp olive oil3 cloves garlic, finely chopped1 small onion, diced½ tsp chilli flakes½ cup tomato purée¼ cup vodka¾ cup fresh cream¼ cup grated ParmesanSalt to tasteFresh basil leaves
Method
1. Boil salted water and cook the penne until al dente. Reserve a little pasta water before draining.
2. In a wide pan, sauté the onion in olive oil until soft. Add garlic and chilli flakes. Stir in tomato purée and cook until slightly thickened. Add vodka and simmer briefly.
3. Lower the heat, mix in cream and salt, and loosen with pasta water if needed. Toss the pasta in the sauce, finish with Parmesan and basil, and serve warm.
Burrata Caprese with Heirloom Tomatoes

Ingredients
2 heirloom tomatoes, sliced1 ball fresh burrataFresh basil leaves2 tbsp extra virgin olive oilSea salt flakesFreshly cracked pepperBalsamic glaze (optional)
Method
1. Arrange tomato slices on a platter. Place burrata in the centre and gently tear just before serving.
2. Scatter basil leaves, drizzle olive oil, and season with salt and pepper. Finish with balsamic glaze if desired.
3. Serve immediately with crusty bread.
Tiramisu Cheesecake

Base
200 g digestive biscuits, crushed100 g melted butter
Filling
400 g cream cheese250 g mascarpone¾ cup powdered sugar2 eggs1 tbsp instant coffee (dissolved)1 tsp vanilla
Topping
Cocoa powderDark chocolate shavings
Method
1. Preheat oven to 170°C. Mix biscuits with butter and press into a lined springform tin. Chill.
2. Beat the cheeses until smooth. Add sugar, eggs, coffee, and vanilla. Pour over base.
3. Bake 45–50 minutes until slightly wobbly. Cool gradually, then refrigerate for 4 hours or overnight.
4. Dust with cocoa and serve chilled.
