


Hello! Just wanted to post this since I am proud of this bake. Made two loaves with this recipe:
– 800g Costco organic ap flour
– 200g KA golden wheat flour
– 20g salt
– 130 g starter (just used what I had)
Process:
-Mixed all ingredients together until cohesive mass.
-Cover and rest for 30 min
-Stretch and fold until dough gets tight.
-After 30 minutes, stretch and fold until dough gets tight again.
-Wait 30 minutes and coil fold x3
-Rest and left overnight to finish bulk ferment (I started this around 9pm and started preshape around 7am.) tbh I totally guessed when bulk ferment would be ready since I used less starter than usual. I had to leave the house around 8:30 am so I just prayed it would be ready around this time.
-Divide and preshape and rest for 30 minutes. I think preshape made my loaf taller. I actually never preshaped before but really noticed a difference in the oven spring because it allowed more tension in the final shape and was easier to work with.
-Shape – attempted tartine method but I think I did something similar but not quite😂 was able shape with a lot of tension at the end though and dumped in banneton.
– cold proofed for 48 hrs (didn’t have time to bake before this)
– preheated oven to 475f with lodge combo cooker. -Waited 30 more minutes after preheat so that cast iron is sufficiently preheated
– put loaf in and closed lid. I did not use ice cubes. Lower oven to 450f
– baked loaf with lid on for 30 min at 450f and lid off for 15 at 400f
Had loaf with homemade chili for Valentine’s Day😄
