From Scratch, a popular Italian restaurant in Ridgewood, will open a nearby sister location next month dedicated to Roman-style pizza.
The new take-out and delivery spot, Pizza by From Scratch, will specialize in Roman pinsa, a lighter, oval-shaped evolution of pizza, as well as stuffed focaccia.
The restaurant is under development at 192 E. Ridgewood Ave., a short distance from the original From Scratch at 44 Ridgewood Ave.
Chef Claudia Rovegno, who owns both restaurants, said Roman pinsa is made with a blend of soy, rice and wheat flour that rises for 48 to 72 hours. Most toppings will be imported from Italy, including prosciutto, mortadella, salami and mozzarella.

Rovegno started offering Roman pinsa during the COVID-19 pandemic to keep her business running when dining restrictions were in place. She later discontinued it at the 28-seat restaurant after balancing both the full menu and pizza orders became a challenge.
Since then, customers have been asking for the Roman pinsa’s return, Rovegno said.
Rovegno moved to the United States from Italy in 2013 and started From Scratch as an online ordering service for homemade dinners soon after. She launched the brick-and-mortar location after a year in business.
Today, From Scratch serves Italian cuisine and offers hands-on cooking classes. It aims to transport visitors into what it describes as the slow-paced culinary world of Italy.
