Mercimek Köfte (Turkish Lentil Patties)

Ingredients:
2 cups red lentils
1 cup fine bulgur (köftelik bulgur)
4 cups boiling water
1 onion
Small bunch of parsley
A few green onions
3 tsp salt
1 tsp black pepper
1 tsp pul biber (Turkish chili flakes)
1 tbsp pepper paste
2 tbsp tomato paste

Instructions:

Rinse the lentils and cook with 4 cups of boiling water until very soft and almost creamy.

While still hot, stir in the fine bulgur. Cover and let it rest for 15–20 minutes.

Finely chop the onion and sauté in a little oil until almost soft. Add tomato paste, pepper paste, salt, black pepper, and pul biber. Cook for 1–2 minutes to release the flavors.

Mix the onion mixture into the lentils and knead well.

Add finely chopped parsley and green onions. Adjust seasoning if needed.

Shape into small patties and serve with lettuce and lemon.
