Did a Bone In Prime Ribeye for the wife and I tonight and decided to try out the 137 club. I cooked for 2hrs total and tossed in an ice bath before searing. Hands down the best results I’ve gotten SV a ribeye and won’t be going back to anything else. Bonus pic is the wife’s plate. Tossed a Lobster tail in the bath for the last 45 min at 137*, shocked in ice bath then did a quick butter baste in a hot pan. I don’t get down with Lobster but I had a bite and it turned out great.

    It renders the far so well without over cooking the meat! It is the perfect temp for ribeyes. Wonderful looking meal!

    Love me the higher temps for ribeye. A good marbled one I sous vide to 132 then sear the shit out of it and it picks up a couple extra degrees. Like you said, it’s the truth!
