
Preheated the oven for 20 minutes, then preheated the cast iron for 10 minutes. Propane oven, added hickory chips right before I put the steaks in for the added flavor. Added the steaks at about 850°
Cook only took a few minutes, rotating and flipping the filets when I could see charring. Using the instant read thermometer to check internal temp every time I moved the steaks. Pulled at 115° internal, rested for 10 minutes.
Probably new favorite way to cook filet mignon.
Next time I will lower the oven temp when I put the steaks on, they got slightly overcooked exterior and perfect interior

You at least gotta show the crust after they come out, come on
made some foccacia once in mine and some burgers when i had a power outage for 3 days
