• Smokey Woods oak chunks

Ran the Weber Kettle with the Spider Venom at 250° for 1 hour Pulled at 115° internal

Cranked the heat and flame kissed it to 130°

15 minute rest = juicy perfection

Oak smoke + hard sear = unbeatable crust
