
I go through phases with my ramen dishes. Currently in the oily mix noodles, which are called Aburasoba or Mazesoba. Not sure of the difference, but They’re called “soba”, but not soba in the traditional Japanese noodle style. Go figure. Good stuff though.

I’d say mazesoba has more of a general nuance. All aburasobas are mazesoba but not all mazesobas are aburasobas.
ime mazesoba is more likely to be the hodge podge kind of soupless ramen with all kinds of crazy toppings like american cheese and stuff.
aburasoba on the other hand is more centered on the oily base that you can add raiyu or vinegar too, with fairly simple toppings like chopped chashu, green onions, nori, and bamboo shoots. the idea is more about emulsifying and creating the sauce as you eat.
