Inspired by one of my favourite desserts, an unbaked lemon cheesecake. Flavour was exactly what I was hoping for. The texture was great. Next time would like to try mixing in pieces of cheesecake base (blended butter, walnut and shortbread).

    400g milk
    150g sugar
    50g dextrose
    250g cream
    150g cream cheese

    Both sugars, milk and cream brought to the boil then removed from heat. Added zest from one large lemon (a bit more than 2 tsp firmly packed) then let it steep for about half an hour before transferring to an ice bath. Once cold, strained out the lemon zest. Then added the cream cheese which was room temperature, and blended with a stick blender until smooth. Passed back through a fine mesh strainer, then added 1tsp lemon juice and 1/4 teaspoon of xantham gum, blended with a stick blender again to incorporate.
