Mixed some store bought pandan cakes pieces while putting in tubs. So good!

40g fresh pandan leaves
75g grated coconut
225g cream
16g milk powder
445g milk
1g xanthan gum
15g dextrose
4egg yolks
160g sugar

Blend pandan leaves and coconut in milk and sieve.
Add the rest of the ingredients except egg yolks. Cook it just like any curstard base. Chill for 5 hours then churn.

I have some pandan leaves in the freezer so I’m keen to try this! Saved for later.

Did the coconut flavor come through from just steeping the shredded coconut? It sounds great- I adore pandan!!!
