It’s just coho salmon landed in Alaskan waters and a restrained sprinkle of salt. Very high quality, no skin on any pieces I had this morning (and no bones, either, if those fret you). Big, old-school tins—as you can see, keep those can-openers handy.
I had a big old plan to incorporate this coho into a meal, but after I took a small nibble, I just grabbed crackers and the Hatch Bitchin’ Sauce—which is tasty, not hot—and called that breakfast. At 6.5 ounces of salmon, I’d ordinarily not plow through it all at one sitting, but was too delicious to stop. Just straightforward, no-added-frills salmon goodness.
I bought half a case, 12 cans, and while I figured that’d hold me for a year, now I’m not so sure.

[Katfish Salmon Co.](https://www.katfishsalmonco.com/) is a small, handcrafted outfit. If you order for delivery, they ship on a certain day each month during their season. March 2 and April 6 look to be the two remaining shipment dates until next fall. Knowledge is power!
I don’t know if I could do fish for breakfast. 😆 But salmon maybe. I guess that’s what lox is so lots of people do it. But anything heavy and oily feels like too much this time of day to me. Sounds like you enjoyed it. I don’t know if I’m ready for a $13 can of fish though. Worth it?
