Hot Honey Halloumi Salad

Great for meal prep, lasts for a couple days in the fridge. Zesty, crunchy, fresh, sweet and salty!

Ingredients
– 100g Halloumi
– Drizzle of honey
– 1/2 tsp chilli flakes
– 1/2 tsp dried thyme

– 1/3 cucumber
– 1/4 red onion
– 1/2 red pepper
– 75g chickpeas
– Handful pomegranate seeds
– Drizzle of Sesame oil
– 1 tsp white sesame seeds
– 1/2 lime, juice and zest
– Small bunch mint, diced
– Small bunch dill, diced

To serve
– 1 tbsp Greek yoghurt
– Pita bread

Method
Cut the halloumi into cubes and add to a hot pan. Cook for a couple minutes until it starts to get a nice but of colour. Then add the honey, chilli flakes and thyme and cook for a couple more minutes until golden.

Remove the seeds from the cucumber and dice the cucumber, pepper and onion into small cubes. Add to a bowl with the diced mint, dill, chickpeas, sesame seeds, pomegranate, sesame oil, juice and zest of lime and a pinch of salt. Give it a good mix.

Add some greek yoghurt to plate, load up the salad and serve with a toasted pita.
